the main ingredient for this curry is duck, we prefer organic backwater duck for this recipe. broiler duck is not much tasty, purchase duck with skin. without skin duck is not much tastier, purchase duck well dressed. we can check what are the other ingredients for making kerala duck curry recipe. we need coconut oil, mustard seeds, garlic, ginger, small onions, curry leaves, turmeric powder, coriander powder, chilli powder and fennel seeds. in this recipe we are not using hard garam masala. fennel seeds are only using for flavoring purpose.
ingredients for kerala style duck curry recipe
duck – 1 k.g cut the same in small pieces
lemon – 1 (squeeze juice from lemon and remove seeds).
for initial preparation
coconut oil – 2-3 stable spoon (you can use any vegetable oil or any other cooking oil)
mustard seeds – 1-2 pinch
coconut pieces – 2-3 table spoon (optional)
for duck gravy
small onion chopped – 250 grams (small onion make more state)
garlic chopped – 1 table spoon
ginger chopped – 1 table spoon
curry leaves – one handful
turmeric powder – 1 tea spoon
coriander powder – 2 table spoon
red chilly powder – 1 table spoon
black pepper powder – 1-2 table spoon (depends upon your taste)
fennel seed powder – 1 table spoon
sliced tomato – 1-2
preparation of kerala kuttanadu style duck curry
you will more state when using conventional stove. if you are using pressure cooker for this duck curry preparation you will not get the exact taste. we prefer cook this duck curry in normal methods, not using pressure cooker. clean duck and marinate the same with lemon juice and wait for 15 minutes. This will soften duck meat and it’s bad smell will go off. take a deep skillet and boil coconut oil, there is no need for big quantity. just 2-3 table spoon need, if you not bother about your health can use more oil. from duck meat ghee will boil out and spread in curry, so it’s better use small quantity of oil.
put mustard seeds and coconut pieces into the oil (coconut is optional, but it will improve taste). cook this in low flame for 2 minutes, add chopped ginger and garlic into this. again on slow flame for 2-3 minutes. add small onions and cook it for 4-5 minutes. add curry leaves into this mixture and put the duck masala into this. cook it for 1-2 minutes and add some water into it. boil this duck masala gravy in high flame for 2-3 minutes. we can add duck prices into this gravy, cook this in high flame for 10 minutes. then cook the same in medium for 20 minutes.
last 30 minutes in low flame, while cooking cover it and check curry in intervals. if you are using a pressure cooker, cooking time will be just 15-20 minutes.
